Cheese Cake Factory: Chocolate Delight

(January-2013) Critanya ada orang di kantor yang ulang tahun, kita dikasih cake dari cheese cake Factory masing 1 potong, udah dikemas individual dengan kotak yang fancy.


Gw ini sweettooth yang cinta banget sama yang namanya cake, tapi personally gw sama skali bukan penggemar bakery yang namanya Cheese Cake factory ini, karena kualitasnya gw rasa kurang, bahkan untuk menu andalannya yaitu cheese cake. Jadi ekspetasi gw ama bakery ini emang kurang ....

Ini juga gw makan karena gratis, prinsipnya rejeki ngga boleh ditolak, takut nanti ngga ada lagi yang ngasih .... hihihihi. Lagian ngga enak sama yang ngasih, mau di bawa pulang juga ngga ada yang makan karena kadar gula bokap lagi tinggi .....

 Oke, kue yang mau direview ini namanya Chocolate Delight. Definisi dari websitenya:
A chocolate sponge, covered with white chocolate cream filling, topped with dark chocolate cream, all buried under a dripping layer of ganache. It really is delightful.

Skali lagi gw kecewa ngga ada yang istimewa dari kue ini, & tekstur kuenya ngga jelas. Mungkin kebanyakan gelatin jadi chocolate cream -nya jadi aneh. dan kalau diteken bouncy gitu deh, jadi kehilangan yang creamy-ness nya. IMHO itu tekstur-nya koq gw ga paham .....



Sungguh aneh .... ini kue yang memecahkan rekor terlama untuk diabisin dari jam 8.30 pagi sampe jam 12 belum abis juga .... ahahhahaha, semacam anak kecil disuruh makan sayuran ijo deh gw ....

Satu-satunya keistimewaannya adalah kemasan yang cantik ....

Brownies Kukus Teh Uceu

I guess Indonesia is the only country in the world that knows a cake called Brownies Kukus or literally mean Steam Brownie in English. The name steam Brownie actually came from a bakery at Bandung named Amanda, that become very famous because of the cake.


Why they called it Steam Brownie? I guess becoz the cake has very strong chocolate taste unlike any other steam cake just like baked brownie compare to other baked cake. Or for marketing purpose .... ;p, you know Bandung already famous for the bake brownie so it easier to sell a cake with the similar name, and the word "steam" will bring customer to curiosity. Well maybe you can ask the owner if had a change to go to Bandung ... ;p

So, coz the popularity of the cake some people start to crate a recipe for the cake such as Teh Uceu & Ny. Liem. Below is the recipe created by Teh Uceu.

8 whole eggs
350 gr of sugar
1 tbs of cake emulsifier

Sift the dry ingredient:
200 gram of cake flour
90 gram of cocoa powder

Mix wet ingredient together:
1/2 can of condensed milk or about 170 gram.
250 cc of vegetable oil
200 cc of water
100 gram of rice chocolate

Beat eggs, sugar & cake emulsifier until it goes very thick and light. Fold in sifted dry ingredients until blended. add wet ingredient gradually, fold. Pour 1/2 batter in to a 24x24cm pan greased with oil, lined with baking paper on base & sides. Steam for 15 minutes, sprinkle with the rice chocolate, & add the rest of the batter, steam again for 25-30 minutes.

This cake is suitable for you that doesn't have any oven, can be used also for base cake of chocolate devil, your black forest cake, or any other cake that use chocolate cake ...

Baked Cheese Cake

It's hard for me to decide the title of this post ... is it "Baked Cheese cake" or "New York Cheese Cake" ?. So I browse around the web to find what is the signature of the "New York Cheese Cake". And I could not found what actually the different between the New York Cheese Cake & any regular baked cheese cake, everyone always seem to have their own version of New York Cheese cake. But most of them use cream cheese & sour cream as their base cream material & their always refer to a very creamy cheese cake.


So, I decided to use the title "Baked Cheese Cake", first reason, as I said before, I could not found the signature of New York Cheese Cake, & second I use Neufchatel Cream cheese, most of the NY cheese cake recipe on the web use regular cream cheese. So it's not fare to use the name New York Cheese cake.

This recipe taken from the cheese cake book from Yasaboga. They named it New York Cheese Cake, but I'm not using the name coz the two reasons above.

Cruz:
120 gram of crushed digestive cracker
75 gram of melted butter

Cheese cake:
375 gram of cream cheese (I use neufchatel cream cheese)
100 gram of sour cream
125 gram of castor sugar (I use powdered sugar)
2 whole eggs
1 egg yolk
15 gram of cake flour
2 tea spoon of lemon zest

this was my addition
Sugar icing: 1 egg white, 125 gram sugar,30 cc of water, a pinch of cream tartar.

100 gram of Strawberry jam, 2 table spoon of water & a pinch of gelatine powder, heat until it emulsify finely.

Method:
Preheat oven 175 celcius.

In a mixing bowl combine the cracker crumbs and melted butter. Press firmly into the bottom of a greased 18 cm round spring form pan. Refrigerated about 1 hour.

In large bowl cream the sugar & cream cheese untill smooth, use the low-medium speed. If you use big stand mixer like kitchen aid, use the creaming beater. Add in flour then eggs & egg yolk, continue mixing, last add lemon zest & sour cream.

Pour the cream cheese batter to the pan, bake au bain marie for 45 minutes. Turned of the oven, open the oven door about 1-2 cm, let it cooled completely. about 1-2 hour. Refrigerated for 4-8 hour untill completely firm.

For the Sugar icing:
Make the sugar syrup from the sugar & water, add cream of tartar to the syrup. Beat egg white until peak, pour the sugar syrup while it's hot. The batter will be smooth again, beat until soft peak.

Decored the side of the cooled cheese cake with the sugar icing & blow torched it. Add topping. Refrigerate for one hour before serving.

Pandan Cheese Roll Cake

Roll cake is big deal to me .... coz it's cost me a lot of experiment just to make the perfect roll .... roll n roll n roll it again & again .....

To newbie like me this recipe is perfect .... first of all, it use just 4 egg & second, it use the chiffon method so the cake is easier to roll ......

I got this recipe from the roll cake book of sedap ... the original recipe is coffee roll cake ... but I make it as pandan cheese roll cake, coz pandan is one of my favorite aroma ....


Ingredient:
100 gram of low protein flour
30 gram of confection sugar
60 gram of salad oil
75 cc of milk
4 egg whites
4 egg yolk
75 gram sugar
pinch og salt
1/2 tea spoon of pandan paste
Filling: 100 gram grated cheddar cheese & 75 gram of butter cream

Method:
  1. Preheat oven 180 C
  2. In large bowl mix the flour & confection sugar, sifted if necessary
  3. In Another bowl mix the milk, oil, egg yolk & pandan paste
  4. Add the milk mixture to the flour mixture, mix until all is well incorporated
  5. Beat the egg white & sugar untill softpeak
  6. Agg the beaten egg white to the flour mixture, fold in 3 stages
  7. Pour the batter in 28x28cm pan, bake for 20 minutes
  8. Wait until it cool down, roll with the filling

Cake Tape

Old fashion .... classic ... old school .... this cake is refferring to those kind of word ... Nowadays not much people, especially youngster will like this cake ....

But for me, this cake is the taste of home .... It's both my parent favorite cake .....




Recipe :
8 Eggs
1/2 table spoon of emulsifier
200 gram sugar
200 gram cake flour
200 gram margarine melted / 200 cc tick coconut milk
400 gram tape singkong blend with 5 table spoon of fresh milk
50 gram raisin for topping

Preheat oven at 170C

(1) Mix egg, sugar & emulsifier untill fluffy.
(2) Add tape, make it several batches, continue mixing.
(3) Add flour, make it in 3 batches, fold with spatula.
(4) Add melted margarine.
(6) Pour batter to a tulban pan, 26cm in diameter.
(7) bake for 35-40 minutes.

Pandan Cheese Butter Cake

I was browsing around for muffin recipe when I found the Filipino Butter Cake recipe. I saw the recipe on aunty Yochana’s blog & amazed by the texture of the cake shown on the picture …. I was thinking, this cake must be so moist … so I decided to give it a shot …


Coz I didn’t like plain vanilla cake, I added a pandan pasta & small cubed cheddar cheese, chocochip & Chocochip for topping. I also modified the recipe a little bit coz I didn’t have some ingredient, the measurement is too exact for me, & the method is the way I make a butter cake ….

This is the real recipe: Aunty Yochana's Filiphino Butter Cake

This is my modification:
260 gram. Cake flour
8 gram. Baking Powder (double acting)
140 gram Margarine
225 gram Sugar
140 gram Eggs
150 cc evaporated milk
50 cc water
2 drop of pandan pasta
100 gram cheddar cheese, cut into small cube
50 gram chocochip for the batter
10 gram chocochip for the topping

Method:

(1) Sift flour and baking powder together. Set aside.
(2) Cream margarine & sugar and milk powder together until creamy and fluffy
(2) Add eggs in 3 stages by turns with a table spoon of flour each time and continue creaming after each addition.
(3) Pour all the flour, continue mixing.
(4) Pour the water & milk in 3 stages. Continue mixing
(5) Add in the cubed cheese & chocochip, mix with a spatula
(6) Pour batter into loaf pan, sprinkle with grated cheddar cheese
(7) Bake at 180C for about 50 mins. or till cooked.
(8) Test cake with a skewer and if if it comes out dry, it's done.
(6) Cool on cooling rack and slice when completely cooled.

As expected the cake is delicious & moist …. I love it so much ……
& really, I don't bother the crack ....

Colorfull Rainbow for my weekend .....

After my failure on lapis surabaya cake, I have about 450 cc of egg white .... I decided to make a rainbow angle steam cake .... It turn out very well .....


It taste good & I didn't get those guilty feeling as after taste .... ;p
